You can’t beat the fruit in season during those long, hot days, and these quick and easy popsicles make the most of summer baking! My thyme and peach popsicles are so refreshing and a healthier treat to have in the house.

About This Frozen Thyme and Peach Popsicle Recipe

The best part about this thyme and peach popsicle recipe is the flavor combination; the sweetness of the peaches with the herby and citrusy thyme just dance beautifully together on your tongue and makes it incredibly refreshing! Not to mention how quick and easy this summer treat is. Just boil, blend, and freeze! Can’t get any easier than that. Also, homemade popsicles are a fun treat to make with the kids!

The Origin of Popsicles

Popsicles, like many other treats in history, were an accident in the early 1900’s. An 11-year old boy named Frank Epperson was mixing a sugary drink with a wooden stick and left out accidentally in the cold overnight. The next morning he had thoroughly enjoyed his frozen, sugar treat on a stick, and had the entrepreneurial mind to start selling them in his neighborhood. He decided to call it an Epsicle which is a combination of his last name and icicle. He later went on to patent the concept for a perfect popsicle. Thyme and Peach Popsicle Ingredients

  • Fresh peaches: Fresh is best for this fruity treat and you want them ripe and juicy! In a pinch, you can also use canned (drained and patted dry) or frozen (thawed and patted dry). I have also used nectarines for these frozen peach popsicles.
  • Fresh thyme: Again, fresh is always best. I would not even attempt to use dried thyme because you lose so much of the bright citrusy flavor and dried herbs leave a bitter after taste. If you love using herbs in baking as much as I do, then check out my other herby recipes!

Equipment Needed

  • A blender or food processor: You need to blend up the peaches with the thyme simple syrup. A stick blender will also work but may leave it a little chunkier.
  • Popsicle molds: You need popsicles molds to make popsicles! Mine are silicone which makes removing easier. Depending on what you get or have depends on whether or not you’ll need popsicle sticks.

How to Make Thyme and Peach Popsicles:

What are Peach Popsicles Made Of?

This no-bake treat has very few ingredients and you want them to be fresh. Fresh peaches and fresh thyme make these thyme and peach popsicles ultra refreshing. With minimal sugar and water, you’ll find them the perfect light, summer dessert.

Make the Thyme Syrup:

To bring out the herbiness of these thyme and peach popsicles, you make a steeped simple syrup. Boil the sugar, lemon juice, and water with the thyme, turn off the heat, then allow to steep for about 30 minutes. You do want the flavor to be powerful instead of subtle, so if you just taste thyme instead of THYME let it sit for another 30 minutes.

Blend, Portion, and Freeze:

Once you have the flavor you want with the thyme simple syrup, it’s … thyme… to blend it with the peaches! You have two options: peel or unpeeled. I prefer unpeeled because I don’t really care about the skins but you might! Before blending, make sure to strain out the thyme, and cut the peaches into small chunks. One thing to look out for here is the juiciness of the peaches. If you have completely unripe peaches you may need more water and a wee bit more sugar to be able to blend into a liquid. You’ll definitely know if won’t blend. I will eyeball the extra water until it gets going.

You have another choice to make before pouring: add in small chunks or slices of peaches into the mold to make chunky peach popsicles or have it all blended. I personally don’t like chunks when I’m slurpin a popsicle but that’s just me! Whatever you choose, decide, then pour in your blended puree into the popsicle mold and insert the popsicle stick. Freeze until rock solid. Remove your frozen peach popsicles from the molds and enjoy this easy treat on a hot summer day. If serving, do so over a tray of ice cubes.

Enhancing These Thyme and Peach Popsicles:

  • Use brown sugar instead of granulated and cut out the thyme for a little sweeter tasting popsicle!
  • Use equal parts cherries and peaches for a little extra flavor combo!

How to Store and Freeze Thyme and Peach Popsicles:

  • Store the simple syrup in the fridge for up to 2 months or up to 6 months in the freezer.
  • Store the puree in the fridge for up to 1 week or in the freezer for up to 2 months.
  • Freeze the popsicles until it’s time to enjoy. Do not leave in the fridge or at room temperature.

Troubleshooting the Peach Thyme Popsicles:

  • My peaches aren’t pureeing! Your peaches may have been too unripe and therefor had too little water content to blend! Slowly add a little bit of water at a time until the blender really gets going and the peaches are able to be pureed. You may need to add a little more lemon juice and sugar to offset the extra water.

Ingredients
 
 

  • 85 g Granulated sugar
  • 226 g Water
  • 1 ea Lemon juice or 26g
  • 10-12 Sprigs Fresh thyme
  • 2 pinch Kosher salt
  • 5 ea Ripe Peaches or nectarines

Instructions
 

  • Bring the sugar, water, juice, thyme, and salt to a boil.
  • Remove from heat and allow to steep for 30-60 minutes.
  • Either peel or leave unpeeled the peaches and chop into small chunks.
  • Strain out the thyme syrup into a blender base and add the peaches.
  • Blend until pureed and pour into popsicle molds. Add in the stick and freeze until frozen, preferably overnight.
