Peach Thyme Popsicles

You can't beat the fruit in season during those long, hot days, and these quick and easy popsicles make the most of summer baking! My thyme and peach popsicles are so refreshing, they'll surely help beat the heat this summer.

Equipment

  • Popsicle molds
  • Blender

Ingredients
 
 

  • 85 g Granulated sugar
  • 226 g Water
  • 1 ea Lemon juice or 26g
  • 10-12 Sprigs Fresh thyme
  • 2 pinch Kosher salt
  • 5 ea Ripe Peaches or nectarines

Instructions
 

  • Bring the sugar, water, juice, thyme, and salt to a boil.
  • Remove from heat and allow to steep for 30-60 minutes.
  • Either peel or leave unpeeled the peaches and chop into small chunks.
  • Strain out the thyme syrup into a blender base and add the peaches.
  • Blend until pureed and pour into popsicle molds. Add in the stick and freeze until frozen, preferably overnight.
