or nectarines
Instructions
Bring the sugar, water, juice, thyme, and salt to a boil.
Remove from heat and allow to steep for 30-60 minutes.
Either peel or leave unpeeled the peaches and chop into small chunks.
Strain out the thyme syrup into a blender base and add the peaches.
Blend until pureed and pour into popsicle molds. Add in the stick and freeze until frozen, preferably overnight.
